What do I use for joysticks? Do I need a custom PCB or what.

Are you talking about switch joysticks or original ones to whichever console you're portabilizing? For switch joysticks, you can use the breakout boards at 4LayerTech (https://4layertech.com/products/joystick-breakout-board-pack-of-2) to make it easier to wire them up. The main thing is having a way to interpret those signals for the various consoles, which is where things like GC+2 comes in.
