To my knowledge I've not seen a lot in terms of a modern screen attachment for a cube. With the prevalence of HDMI adapters people use and the internal mod one can install, I wanted to resurrect that old Mad Catz display attachment that I know most of us secretly wanted.

Parts List (everything will work off the shelf):
Currently this project is in alpha as I've only just received the parts myself and tested them.

The next step is designing a housing that will latch onto the GC and has a hinge for closing and opening like the original one did. I wanted to have it lock into place until closed like a 3DS screen so any pointers on how to achieve this aspect would be greatly appreciated will probably use laptop hinges after what fluffypenguin pointed me towards the Party Box by Wesk.
I will update this as I go and start the modeling process this weekend for an initial design.

Model Update
Started working on the model for the housing on Friday. Currently it is "Function over Form" and will stay that way until modeling is finished.
Once the functionality of the prototype is finished i will be adding fillets to the edges and logo engravings on the back for customization. Any suggestions on logos would be helpful as I'm only thinking of using the Gamecube Logo, Hylian Crest, and possibly something Kirby or Pokémon related.

Parts List Update
The Y Splitter was the only thing that hadn't arrived during initial screen testing. After receiving the part and doing some research I've found there isn't a true y splitter for USB-C power delivery (I'm still a bit of a noob). As for a 12v 3a brick with two USB-C ports on it to power both the GC and screen, after looking around and being unsuccessful the splitter will be replaced with any USB-C brick with a female C port on it to power the screen by itself. so the quoted parts below will be changed to these:

I can definitely see the Smash Bros. logo, maybe even a Pokémon logo being added, but you could also include your own if you decide on if you want a logo for this project

a thing i wouldn't mind seeing is a possibility of adding the option to swap out logos, just like you could with the GameCube.

UPDATE
Had little time to work on this project this week due to issues at work and myself being one of two maintenance engineers, but the project MUST be finished!

First I took into consideration what StormEye45 said and made a vanity plate that attaches to the back of the housing with magnets. This will allow for interchangeable logos I myself haven't figured out if I want to make a logo for this project or not yet. I do plan on releasing the native fusion files when this is complete so one can add their own logo using the hobbyist version of fusion or changing it to fit their needs as I would prefer everything I make to be open source for all to use freely.

I than tried a design for how it would stay on the GC which didn't work so it was back to the drawing board for that. Thanks to the 3 day weekend due to labor day i will be spending time printing the initial prototypes outs and test fitting everything to ensure it works functionally first than worry about getting the "form" in a place I like.

I hope to get this completed before mid September for Version 1.0.
