About to solder my gc plus to the ashida pcb and was wondering, is it programmed out of the box to work with an ashida? Or do I have to do that myself?

All GC+ boards sold by the 4layer store come with the necessary firmware preloaded. Just connect each pad to the Ashida, wire up player 1 data, and you should be good to go!

You should probably shield your player 1 data line by twisting it with a ground wire though. The Ashida is a noisy build, and the controller might work intermittently if you don't shield it. You may also need to shield other wires like the PMS data lines that go to the Wii.
 
The wire from the wifi antennas is shielded coaxial wire. You can use it as instead of a ground twist if you prefer, but it can be tricky to strip and there's a limited amount in each Wii unless you buy a small reel of it.

Note: Don't use that shielded wire for USB. USB is a differential data pair and must have D+ and D- twisted tightly together so that both lines experience identical interference. If one line gets even a little bit more than another, it breaks the world.
