I'd like to make my wii (RVL-CPU-01) output VGA, but I'm not entirely sure how. I know I need to install a VGA patch, and I know I need to modify it to give it a VGA connector, but I'm not sure how to do the second part, or how to get the Vertical and Horizontal sync signals that VGA needs. Can anyone help?

Also, what exactly does the VGA patch do? I know it forces 480p output, and I'm pretty sure it forces the AV chip to output RGB instead of YPbPr, but is there anything else it does?

To be clear, it does not "force" 480p output - that still needs to be set if you want a progressive signal.

Secondly the H and V sync information is available in the Wii trimming guide:

Thanks. Do you need to do anything to the H-Sync and V-sync signals, or can they be directly connected to a VGA cable?

And the audio needs to be sent to an amplifer, correct? I want to use headphones with this, and I'm not sure how much power the wii puts out.

Nothing needs to be done to the H and V sync lines, they can be connected directly to a VGA plug.

An untrimmed Wii has a 12v audio pre-amp. (this info is in the trimming guide) Depending on your headphones you may not need an additional amp, that'll depend if they are high or low impedance.
