Would using the Wii U gamepad screen for the raspberry pi be possible?

The Wii U gamepad does not use any sort of common video source, so you would not be able to.
 
As Ginger said, unfortunately not. However, if you want to use a Wii U gamepad shell, there are plenty of screens that accept composite/VGA/HDMI that will fit that shell just fine.
 
You can use the gamepad's buttons and joysticks for it if you wire them to a teensy.
