Composite will work as normal with the VGA patch installed if MODE is not connected to 3.3v. Your MODE line is not connected to 3.3v, so composite *should* work as normal

The fan isn't spinning because you haven't soldered the 5v jumper, and with the LDO still on the board you don't need to wire the 1.8v line from the PSU-PLUS

Sadly, the Eyoyo screens no longer have YPbPr compatibility. They're no longer worth buying over simpler models like the one sold by 4layertech

That's usually indicative of a USB wiring issue. The wire length you have there should be fine, and your twist looks alright, so my next question would be whether you have confirmed that you have D+ and D- wired to the correct pads?
