In the guide hub, there is a 6 layer expansion to the general trimming guide that details where everything is on a 6 layer board. There are two U10 vias in that diagram you can wire to, you are able to use whichever one you prefer.

Q1 - I don't think there are any good videos right now that shows the trim being done. Safety wise, as long as you wear safety glasses/goggles and don't cut super close to your fingers you should be fine. Definitely cut outdoors as the dust is less than healthy.

Have you checked out the cooling kit in the BitBuilt store? That kit has all the same parts as what the Louii uses.
If you need just the fan, then there are some on eBay like this that have popped up recently. Unsure whether they ship to Canada though.
Have you gotten the trimmed Wii to successfully boot since you did the trim? If you haven't, then I'd reccomend removing BT and MX for now and just try to get a booting board with the bare minimum. Some of the soldering looks a bit sketchy, definitely use thinner wires for power on the Wii...
Well, that all depends on the size of the screen and control components you use. I'd reccomend getting those parts in hand so you can take some measurements and base your size off of those.
16v is also a fair amount higher than what the input voltage is rated for on the 1v and 1.15v PTH regs. Using those in this situation is probably not advisable. What is the project you're working on?
Unfortunately the 7900X models are the only ones supported for trimming. I'd reccomend trying to get one of those if you're looking to trim, I can generally find them on eBay for $30 or so.
