You might have to invest in a new shell regardless. I have the same light blue 101 and for some reason the shell started cracking and breaking apart. I never did reshell mine. It’s currently held together with superglue. :D

I literally never use a pinout when wiring composite on a Pi. I just start by wiring ground to whichever pin appears to be the logical ground then poke around the other pins with the video wire until I get a picture on my screen. ¯\_(ツ)_/¯
Thirded. I used Adafruit’s Retrogame for my past Pi projects. Pretty easy to configure, at least a Linux noob/nood such as myself could handle it. Drawback is afaik it still doesn’t implement analogs, which something tells me your project won’t have anyway. Go ahead and prove me wrong!
