Would you be able to solder the power to the output of the regulator and ground to ground? I'm getting my screen today and wondering if something like that would work.

There's a good chance that the LCD doesn't run off 12V natively. For car screens, they usually have a step down regulator that converts the 12V from the cigarette port down to a voltage tolerable for the screen. There might be a regulator of some sort, but I'd wait for someone more competent to...
