Just as the title states, where do I start as a beginner? I know that you need to read quite a lot, but where do I go from there? Should I just get a gboy and start cutting?

Learning the basics of soldering would be a good place to start. There's a lot of soldering in any portable project, so having a solid grasp of how to do it with good technique is essential. Shank curated this collection of videos a while ago, there's a mix of practical basics and overviews of some of the electrical concepts the build will entail. You don't expressly have to watch them all, but I recommend at least watching the first set. https://bitbuilt.net/forums/index.php?threads/electronics-101-videos.1224/

Also, Ginger put together a basic overview of tools and such that you'll need in the course of any build. https://bitbuilt.net/forums/index.php?threads/general-tools-and-materials-guide.3128/

I'd give it a read too, helps to put everything into scope. Also tools cost money, so it helps to be able to factor that cost into your budget early.
