I accidentally bought one of the lengthier versions of the PTH08080 and was wondering if it is possible to just grind and or cut the pins off to make it shorter?

Sure. If I remember correctly, those are only soldered in and can be taken out quite easily. Might he wrong though.

The pins do come out of the PTH08080 if you desolder them, but the ground pin takes a lot of heat to remove.

I can second this, I've done this to quite a few, and they do come out with a LOT of heat, probably around 450c-500c, the ground pin takes an especially long time to heat fully. I recommend adding some lower temp solder to the pins to help em come out.
