Took a standard composite cable, ripped out the composite wire and added S-Video in place of it. Made sure to put some insulation between the pins to make sure they wouldn't short.

pin 7 luma or pin 9 chroma av wii use and GND . pin 8 and 10 no shorted

That may just be the NES game, try something else? I just wired directly up as shown in the pictures. Though, to be honest, the composite video looks really good in your first image, I don't know how much you will benefit from s-video.
