I want to be able to somehow use a poteniometer on the amp board (Any guides on this?), this is what I want to use - GBA 5-pin potentiometer

Please don't buy these 18650s.. Better get genuine ones from manufacturers like Samsung or Panasonic.

Those batteries are FAKE AF. Just like @The Awakened One mentioned you should buy reputable brands. Panasonic or Samsung around the 3400mah level.

I don't believe that audio amp supports a volume pot and you won't need a charging protection board if you're using the RVL-PMS as that has one built in (Check specs on the BB store page).

Also, does it matter which model I use for my batteries? Can I use NCR18650BD batteries?

Yes

You can but you probably don't need ones with such a high discharge, something like this would be a better choice:
