A Portable Wii U would probably not be a good Idea since the components are too far apart on the PCB and saving space by trimming wouldn't be that much of a thing, unless you want an extremely unpractical and huge "portable" you shouldn't try making a portable Wii U.

I'm aware of that and VGA is all I need as I will just be building a Wii portable, though what I don't know is how much power the screen draws as my 3V3 regulator only outputs up to about 3A and I don't want to "underpower" my portable.

You might just have a Wii with solder protection, just scrape at the Vias a bit with an exacto knife and the protection should come right off, then you should be able to solder to the Wii.

did you desolder the LDO or did you dremel it? if solder, you can just resolder it.

You should probably know that the G-Boy PCBs don't exist anymore and unless you have a kit or you plan on making your own, you should probably just build a G-Wii V2 or an Ashida using the 4Layer-Tech PCBs

As long as a Wii is not white or doesn't have gamecube ports it's a 4 Layer Wii for sure, this one is black so it's a 4 Layer Wii (the good Wii type). This is most likely a model between RVL-40 and RVL-60. Here's the guide for identification...

Those are Rev2 Boards, the G-Boy uses/used proprietary versions of the V1 Boards. You'd have to redesign the internals of the case to fit the new Boards and still design some for the triggers as those weren't sold in any way or form apart from the G-Boy.
